Tasting Notes
Intense ruby red colour, the 2012 Insignium shows aromas which reflect the climate of the vintage while maintaining a delicate freshness. On the palate, the ripe red fruit and spices, along with deep floral notes, define this wine’s complex structure. The palate is succulent, rich, enveloping and sweet thanks to the presence of dense, supple rounded tannins. The vibrancy of the wine contributes to the excellent expressiveness of the flavours and persistence. Seamless, sophisticated and stylish.

In The Vineyard
During the 2012 vintage we experienced moderate day temperatures with nice cool evenings resulting a very good season. Harvest commenced on 14 March. Grapes were harvested between 24.2°B and 25.5°B with a total acid of 7.0-7.5 g/l and a pH of 3.35-3.4.

The Cabernet is well established trellised vineyards planted on well-drained decomposed granite soils from Jonkershoek . These vineyards have access to supplementary irrigation. The Cinsaut is old bush vines. Non-irrigated on decomposed granite from Groenekloof.
In The Cellar
Exquisite parcels of Cabernet Sauvignon and Cinsaut were fermented separately in open top fermenters. A series of punch downs and pump overs were employed to manage extraction. Further maceration followed before racking to barrel for Malolactic fermentation. The wine spent 20 months in French oak barrels ( 300l and 500l), of which 75% were first fill ( Cabernet Sauvignon ) and 25% in older barrels (Cinsaut noir ) .
